Strawberry-Lemon Squares
1 C Butter ½ C. Powdered Sugar ½ C. Walnuts or Pecans (finely chopped) 2 ¼ C. Flour 1/8 tsp Salt 2 C. Sugar, granulated 4 Eggs 7 Tbsp. Lemon Juice 1 TB Lemon zest 5 Medium strawberries 4 drops Red food coloringCombine butter, powdered sugar, 2 cups flour, nuts, and salt with pastry blender until crumbly. Press mixture into 9 X 13 lightly greased pan. Bake in pre-heated oven for 15 minutes at 350.
Combine remaining flour and 2 cups granulated sugar in. a bowl. In blender: blend strawberries, eggs, lemon juice, zest, and food coloring on high until smooth. Add to flour/sugar and mix well. Pour onto crust. Bake for 25 minutes at 350 or until set. Cool. Refrigerate about an hour. Sprinkle top with powdered sugar (optional). Cut into squares. Enjoy!

Barely 18 years old, Mike was diagnosed with Ewing’s Sarcoma (a rare cancer). After many treatments and a below the knee amputation, Mike has long road of recovery ahead of him. We’re on board to make a fun day of music and bowling happen to help offset some the mounting medical expenses.
Donation is $20 and you get you an afternoon of bowling as well as music by Nuts in a Blender from 2-5pm!
