This spring provided a banner year for New York's maple syrup industry
Syracuse, NY -- Maple syrup production in New York increased 81 percent this year compared to the dismal season in 2010, according to statistics from the state Department of Agriculture and Markets.
New York maple producers this year made 564,000 gallons of maple syrup, said King Whetstone, director of the U.S. Department of Agriculture’s National Agricultural Statistics Service office in New York.
It is the highest production since 1947. Last year, 312,000 gallons were made after an early warm-up stopped the sap run after only a couple of weeks. In 2009, producers in the state made 439,000 gallons.
Whetstone said the number of taps in New York increased this year. There were 2.01 million taps, up 6 percent from 2010. He said it’s the largest number of taps since 1950.
An overwhelming majority of maple producers in the state reported a favorable season, Whetstone said. This includes producers in Central New York.
Harry Komrowski, of Lysander, said in May he set a record of 274 gallons of syrup. Oneida producer David Klish said the season was quite long. Gary Hurlbut, in Mexico, said the season was great and the quality of the syrup was fantastic.
The weather was with the producers this year, as temperatures began to warm above freezing in March and stayed in the 40s during the days and in the 30s at night, allowing sap to run for a month or more.
Only Vermont produces more syrup than New York. Its producers made 1.14 million gallons this year.

How does a maple syrup evaporator work? Sap collected from sugar maple trees is poured into the “preheater” sitting on top and on the back of the evaporator. Sap drips slowly into the evaporator in the front-right corner. The three partitions you see each have one opening to allow the boiling sap to wind its way from right to left. After hours of boiling, the nearly finished maple syrup in the front left corner can be drained off. As you can see in the beginning of the video, we use wood to heat and boil the sap. It takes about 40 gallons of sap to boil down to one gallon of maple syrup.
